The Hostile Reality
The soil contains Perchlorates (ClO4), toxic salts that attack the human thyroid. Any "water" extracted from the soil is a poisonous chemical soup requiring complex industrial processing before drinking. Drinking untreated Mars water would cause organ failure.
Current Tech (TRL 9)
ECLSS (ISS): Closed-loop recycling. On the Space Station, 98% of water from urine and sweat is recovered. This technology is mature and essential for Mars.
Future Engineering
Rodriguez Wells: Drilling deep into buried glaciers at Arcadia Planitia and injecting heat to create a subterranean liquid water pocket that can be pumped to the surface without excavating tons of rock.
